We are blessed to have house managers who cook things up from scratch. When it's cold, residents love a good pot of soup with a side of cornbread.
Beef Vegetable Soup Recipe
-2 lbs of ground beef
-1 large sweet onion, diced
-2 stalks celery, diced
-Mixed Veggies (3 cans or 1 bag frozen)
-32 oz Beef Broth
-To taste: garlic powder, onion powder, salt and pepper
Brown meat with onion and celery. Drain grease. Prepare frozen veggies or open cans. Dump the rest of the ingredients and add seasoning to taste. Simmer for 1 hour on low after boiling. Serve with hot cornbread.
